Preparation:
Prepare phase A, dispersing xanthan gum under stirring. Heat to 80°C. Prepare phase B and heat to 75°C. Add phase B to phase A under stirring. Homogenize for 3 minutes at 3000 rpm. Cool to 40°C under gentle stirring (50–100 rpm). Prepare phase C and add to phase AB under stirring. Homogenize for at least 3 minutes at 3000 rpm.Notes:
