Preparation:• Phase A- Mix Xanthan Gum into Water- Homogenize. • Combine ingredients of Phase A, heat mixture to 70C • Combine ingredients of Phase B, heat mixture to 70C Under high shear mixing, add phase B into Phase A and mix(~3000rpm) unAl completely emulsified. • Cool down under moderate agitaAon and add Phase C at 35C. • Cool down to 30C. PH Range 5.5 – 6.5
