Preparation:
Phase 1: disperse Vivapur Cos 6 in warm water (40 – 45°C) whilst stirring moderately till obtaining the total dispersion. Add phase 2 to 1 whilst stirring until xanthan gum is totally hydrated. Heat phases 1+2 and 3 to 75°C separately. At temperature, add phase 3 to phase 1+2 whilst stirring moderately. Homogenise gently during 1 min using Ultra-Turrax. Cool under slow agitation. Add phase 4 under 40°C. Adjust pH with phase 5.Notes:
