Preparation:Heat phase 1 to 80O Celsius and let swell for 20 minutes under prop agitation. Heat Phase 2 to 80O C or until completely melted and mix under prop agitation. Emulsify with Silverson homogenizer at moderate speed while using a medium yield mesh screen. Begin to cool down to 30O C after smooth glassy liquid is obtained. Switch from Homogenizer to a paddle or sidewipe at 55O C. Cool to room temperature.
