Preparation:
Disperse the xanthan gum in the water, when homogeneous add the other ingredients of phase
- Heat phases A and B separately to 78°C. Add A to B with paddle stirring and then homogenise for 1-2 minutes. Continue stirring and cooling and then add phase C below 45°C. Stir until cool.
