Preparation:
In secondary vessel, combine A and start mixing. Slowly add B with continued mixing. Heat this oil phase to 80°C, then, in order, add C. When A–C is homogeneous, add D and mix until totally dissolved. To the main vessel, add E and start mixing. Add F and when dissolved, add G. When fully incorporated, start heating to 80°C and add premix of H. When oil and water phases are uniform and at the defined temperatures, add the oil phase (A–D) to the water phase (E–H) with strong mixing and without aeration. Start homogenizing intensively and start cooling. When the batch is at 45°C, add I and keep homogenizing intensively. Stop homogenizing and resume sweep mixing. Add J and mix well. When the batch is uniform, add deionized water to correct for evaporative losses. Continue mixing until a smooth, homogeneous cream results. Perform final quality assurance checks.Notes:
