Preparation:
Heat phase A to 80°C for 20 minutes under prop agitation. Heat phase B to 80°C, or until completely melted, and mix under prop agitation. Emulsify with Silverson homogeniser at moderate speed while using a medium-yield mesh screen. Begin to cool down to 30°C after smooth, glassy liquid is obtained. Switch from homogeniser to a paddle or sidewipe at 55°C. Add phase C between 50°C and 40°C, before butter begins to really set up. Cool to room temperature under constant side wipe.Notes:
